What are the benefits of sourdough bread having a low glycemic index (GI)? Glycemic Index is a measure of how quickly foods raise blood sugar levels, and those high on the GI cause a rapid & large increase. Foods lower will cause a slower, more gradual increase.
The three GI ratings:
Low: 55 or less
Medium: 56–69
High: 70+
Sourdough bread has consistently been found to have a lower glycemic index (54) compared to unfermented bread (in the 70s), such as white bread or even whole wheat bread. This is because sourdough bread is made using a fermented dough, which breaks down the complex carbohydrates in the flour in to simpler sugars, such as glucose and fructose.
How does that help?
These simpler sugars are absorbed more slowly into the bloodstream, resulting in a slower and more gradual increase in blood sugar levels.
And the sourdough culture is an acidic environment, which ALSO appears to help in lowering sourdough's glycemic index. The presence of acetic acid bacteria (AAB) and lactic acid bacteria (LAB) in sourdough produce organic acids during fermentation, which can slow down the digestion and absorption of carbohydrates.
These acids can also lead to a lower insulin response, which can contribute further to a low glycemic index score! So the lower glycemic index of sourdough bread makes it a better option for people who are looking to manage their blood sugar levels or have diabetes.
