Late last year I had the chance to visit Chef Matthew James Duffy, AKA Sourdough Duffy at his home microbakery near Toronto.
Sourdough Duffy is a baking professor in addition to all his other experience, giving him a rich sourdough background. We chat about his journey, his approach, his overall sourdough operation, and most excitingly about his book coming out later this year!
This is my first podcast where I’m a host. It is ambient. It is real. It has a bit of a sourdough song at the beginning and end that I recorded in my early days after getting sick from baking all night.
