Why a baking steel instead of a ceramic pizza stone? At a high level, per Gemini:
A baking steel can get hotter than a ceramic pizza stone because it has a significantly higher thermal conductivity and is denser, allowing it to transfer heat to the dough more quickly and efficiently.
